THAI COCONUT CURRY SOUP

SOUP
In a high-speed blender, combine:
* Water and meat of one thai young coconut
2 T Bragg’s
2 T olive oil
2 T lime juice
2 cloves garlic
1 T ginger
1 T curry powder
1 T liquid sweetener of your choice or 1-2 dates (opt)

Chop and divide into 2 bowls any or all of the following:

avocado, portobello mushroom (shiitakes or criminis work too), cherry (or other) tomatoes, red bell pepper, cilantro, snap peas, green onion, jalapeno; mung bean sprouts (or sunflower sprouts, etc.); anything else that appeals to you.

Add soup to bowl of vegetables and enjoy! 🙂
