CELEBRATE SPRING SOUP

from the Raw Vegan Recipe Exchange

Roughly chop and combine all ingredients into a high-speed blender:
2 c water
6 asparag…us spears
2 stalks celery
8 snap peas
1 sunchoke (aka Jerusalem artichoke)
½ cucumber (I use zucchini)
½ red bell pepper
½ Anaheim chile (or to taste)
Optional additions:
¼ c dried tomatoes
1 TB basil
1 tsp dill

Blend until smooth and top with your favorite sprouts. Enjoy! 🙂
