My Favorite Healthy Ice Cream
I am blessed to never need to buy ice cream because my daughter Valya frequently makes delicious and healthy desserts. Valya has been testing and re-testing the recipes for her new eBook and she has kept our freezer well-stocked with delectable yummies. Today I am happy to share with you two recipes from Valya’s latest eBook “Healthy Frozen Desserts.”
Each one of these yummy popsicles meets your daily needs for selenium.
8 Brazil nuts
3 tablespoons honey
1 tablespoon lime juice
1 cup orange juice
1/4 teaspoon nutmeg
Instructions: Peel and cut up the avocado and place it in the blender. Add in the remaining ingredients and blend thoroughly. Pour mixture into popsicle molds and freeze for 12 hours. Once frozen, run the popsicle molds under hot water to make the popsicles come out smoothly.
Yields: 6 popsicles
Try this satisfying dessert for a guilt-free afternoon treat.
2 cups fresh orange juice
1 frozen banana (peel before freezing)
1/2 cup frozen strawberries
1/2 cup frozen blackberries
2 teaspoons psyllium husk powder
Instructions: Place the berries and banana in the blender. Add the orange juice only immediately before blending or else it freeze from the frozen fruit. Tightly close the lid of the blender and using a low or medium speed, blend thoroughly using the tamper. Once everything is evenly blended, without turning off your blender, add in the 2 tablespoons of psyllium husk powder. Blend thoroughly once more. Serve immediately. Vitamix strongly recommended for this recipe.
