RAW NON-DAIRY WHIPPED CREAM

Rhonda used this recipe to top a key-lime pie. It can be used for topping most anywhere a whipping cream would be desired and is especially good on fresh fruit. Why bother with the health issues of dairy when you could have this! Light, creamy, and just the right sweetness. Your guests would never guess there’s no cream involved!
1 cup pine nuts OR macadamia nuts (soaked overnight and drained)
1 golden delicious apple (peeled and seeded)
¼ cup agave nectar
¼ vanilla bean (ground) OR 1 teaspoon pure vanilla
1 cup distilled water
Place all ingredients but the water in a Vita Mix or other powerful blender. Turn on the blender and slowly add water. Less water makes a thicker dressing so add the water slowly until desired consistency is reached. Enjoy!
